The origins of rust, the red curry of Provence

The suspense is not at its height when we look for the origin of the rust. Its name very clearly indicates Provence. Can you hear the cicadas singing? Can you see yourself facing the Mediterranean Sea tasting such typical regional flavours? The spice mixture in the rust sauce comes from Provence. This sauce, which is also called Provençal mayonnaise, is typical of the South of France. In Provençal, it is called "rouïo". And one can immediately imagine, when tasting a rouille sauce, the so singing accent of the Mediterranean Provence. If this sauce doesn't offer you a trip to the end of the world like the different spice blends I'm accustomed to offering you (tandoori, garam masala, Lebanese zaatar, etc.), a gustatory escapade on the shores of the Mediterranean is, let's admit it, already quite enjoyable.

A matter of taste

Ma rouille de Provence is a blend of spices that will allow you to make a sauce full of pep. As is often the case in spice blends, it is to each his own, some variations can be proposed to vary the flavours. For my part, I chose to compose this mixture of paprika, garlic, mustard, semolina, hot pepper and salt. If you like dishes that have life, you will love my Provencal rouille. Its beautiful red color and its frank tastes will bring a real plus to your Provencal cooking. You will love its warm flavors that correspond so well to the region.

Provence rust in the kitchen

The mixture of spices for rust of Provence that I propose to you will accompany many dishes. Of course, when we talk about rust, we think of bouillabaisse, this delicious traditional recipe from the South of France. Scorpion fish, red mullet, saint-pierre, lobster, conger eel, potatoes, this fresh and full-flavoured dish will be spiced up by the rouille sauce that you will make with my spice mix. Make a magnificent mayonnaise and incorporate these spices rouille de Provence, your dish will take on a whole new dimension. You will have understood it, the rouille de Provence adapts perfectly to fish dishes. Thus, it finds its place in a fish soup, especially the Sète soup in which leek, carrots, tomato, white wine and fish are put. Accompanied by its rouille sauce, this soup will make you travel to the Mediterranean. However, this mixture of spices does not only accompany fish. Its composition makes it a perfect blend to give taste to all your preparations. Spice up white meat and sautéed vegetables, garnish a tomato, zucchini and mozzarella tart, make a delicious sauce to accompany mussels, etc.

The preservation of this spice

My Provence rust spice mix comes in an airtight bag. It is best to store it away from light and humidity, in a cupboard or a nice spice jar in your kitchen.

The virtues of curry rust of Provence

Eating Provencal rust is exquisite. But if it is good for your body, you would be wrong not to enjoy it. My spice blend is made with chilli pepper. Now, this one is known for its digestive properties. Moreover, it has anti-inflammatory virtues and is able to transform bad fats by its burning taste. It is therefore a perfect slimming ally. Antioxidant, it actively fights against cell aging.
