For some time now, the days have been getting longer and this means that the long winter evenings when you used to get together with your friends and family for a delicious raclette are over. Don't be nostalgic, you know that the return of mild or even warm days will fulfill your imperious need for conviviality. For this, you have equipped yourself with a formidable weapon: a plancha! And what an excellent idea!

This cooking device and the method associated with it are so many assets for the pleasure of the eyes and palate, for your health and that of your guests, but also for the festive atmosphere of the mild spring and summer nights.

These qualities come directly from the inhabitants of the Basque Country who, during the 19th century, had the brilliant idea of cooking quickly and harmoniously all types of dishes for a large number of guests (especially during large religious celebrations), on a long stone that they called "plancha" plancha ".

The advantages of this method of cooking by contact are quite numerous since they allow to offer, without addition of fat, a homogeneous cooking of all your pieces of meat, fish, shellfish and even your vegetables and fruits, while avoiding a carbonization (which makes it possible to preserve the gustatory and nutritive qualities while exhaling the aromas emanating from the juices).

It is probably for these reasons that even the great chefs of the world have decided to adopt this cooking system which goes beyond a simple fashion effect.

If you have chosen to cook a la plancha, it's because you love powerful and pure flavors, without the degradation of an ingredient spoiling this moment of gustatory pleasure.

It is precisely with this in mind that I have concocted a delicious blend of 5 ingredients that will enhance each dish you choose to cook on the plancha. The Spice Mix - Plancha du Soleil will allow your summer evenings around a plancha, to shine best on the plates and in the hearts. But you can find this pleasure throughout the year, by sprinkling a little of this mixture on your meats and vegetables seared to perfection, to bring home a little of that light we miss in winter.



The Spice Mix - Plancha du Soleil will bring you its fresh herbaceousness and its power even before bringing it to the mouth. It is presented in a crushed form that preserves all the flavors of the 5 ingredients that compose it.

To the nose, you will feel a rather global approach where each of the ingredients seems to have chosen to gather its aromas in order to propose you a flight in a "soft power".

Once you taste this blend, you will first feel the vigor of garlic, then, very quickly the herbaceous flavors of parsley and basil, before feeling the almost sweet flavor of niora pepper. All this is enhanced by the salt added in small quantities.

This ready-to-use blend will be a great ally when preparing a meal cooked a la plancha. Simply sprinkle it on your meat, fish and vegetables at the end of cooking.

You can also use it as a marinade by sprinkling it in a little extra virgin olive oil.

And if you want to vary the pleasures during the same plancha meal, you can offer more exotic flights to your dishes by combining this mixture with a little Curry Company of India or Cumin Powder.

For your recipes with the plancha:

This mixture has been specially composed and dosed so that you can use it at will on all your savory dishes intended for cooking on the plancha. You can use it on your meat (white or red) and poultry. After marinating your best beef pieces in a little extra virgin olive oil and this mixture for a few hours, you can offer delicious Beef Brochettes. This marinade will be perfect for chicken cutlets. If you choose a Duck Breast, I invite you to sprinkle a little of this Spice Mixture - Plancha du Soleil at the very end of cooking.

Fish and shellfish will be sublimated by sprinkling them with this fresh and round touch of the Spice Mix - Plancha du Soleil. Propose to your guests, in the manner of Alain Ducasse, a Back of Cod poached and gilded a la plancha, piquillo coulis and soft rice; or Prawns a la plancha, artichoke, beans and sautéed tomatoes. I'm sure you'll enjoy delicious scallops a la plancha with their risotto or paying homage to our Basque friends, inventors of this ingenious board, by preparing Chipirons with Espelette pepper a la plancha.

As for the vegetables, they will not be outdone and will also be sublimated by being cooked a la plancha which will give them particularly greedy and invigorating flavors and seasoned with this delicious mixture. From Artichokes and peppers a la plancha, in the manner of Alain Ducasse, to Tomatoes a la Provençale, through Pepper and Zucchini Rolls.
