WHAT IS THE "ROYAL 5 SPICE" BLEND?

Traditionally, the Five Spice Blend is composed of Badian, Fennel, Cinnamon, Clove and Sichuan Pepper, but like any blend, its recipe can vary according to the region, the taste, the person who creates the recipe..

The success of a royal 5 spice blend lies in the perfect balance between the 5 ingredients. But like any mix, this one can be revisited to bring a note of originality to its taste.

I have chosen to offer you a recipe for a 5 spice blend different from the one we know. For this, I chose to replace the black pepper by ginger, another spice commonly used in Asia.

Why this change? To accentuate the exotic axis of the aromatic palette while finding the balance of the five flavors: bitter, acid, salty, sweet and spicy.

The origins of the Royal 5 Spice blend

The 5 spice blend is commonly used in Asia. This Chinese blend is also used in Vietnamese cuisine.

In China, it has long been an ingredient in traditional recipes for duck or marinated meats. Dried tofu with 5 flavors is also a recipe to which this blend of 5 royal spices gives all its flavor.

The spices that make up this blend were already known and used in ancient times in the Middle East and Asia. They came to tease European taste buds by becoming one of the most prized product groups in the trade made through the famous Silk Road. At that time, their role was versatile since, not only did they bring a very special flavor to traditional dishes, but spices were also used to allow for optimal preservation of food.

How to use the Royal 5 Spices in cooking?

The 5 spice blend can be used as a marinade, during cooking or by sprinkling it on your dishes. It offers a real explosion of flavors that will awaken your taste buds, tasting as much salty dishes, as sweet preparations, or infusions.

This mixture will perfectly surprise you during the realization of western recipes as the foie gras 5 spices on a slice of cereal bread.

This tasty appetizer will seduce you for its taste and simplicity. The 5-spice blend was imported to Madagascar by Chinese immigrants and is used in the composition of many local recipes, including samoussas. Here, the stuffing of port is flavored with the 5 spice mixture. The patties are made with corn flour. To taste them, prepare a virgin sauce well spiced. A delight!

The dish: Marinated pork ribs with 5 spices

Marinated pork ribs are a barbecue staple. Here, marinate the meat for 4 hours in sesame oil, soy sauce and a teaspoon of my royal 5-spice blend. Cook over high heat and serve with basmati rice or rice sautéed with vegetables.

Dessert: Homemade 5-spice compote tartlets

A tasty homemade dessert! Make a shortcrust pastry. Cut apples to cook after peeling them. Stew your apples with a little water and a little sugar. Add a pinch of 5 spice mix. Crush your apples with a fork. Make small pie shells with your shortcrust pastry and put the compote in them. Excellent with an oriental 5 spice infusion.

How to store the Royal 5 spice blend ?

The 5 spice blend can be kept in a cool and dry place. Keep it in an airtight jar away from light. It will develop all its aromas during several years.
