Creation and assembly of spices in France
The combination of spices is an ideal way to bring different flavours to your dishes. The Aztec Curry that I propose to you will become an ally in your kitchen to give a "taste of elsewhere" to your meats, vegetables and fish. For my recipe for Curry powder, I have carefully studied the combinations of spices that go best with it.
David Vanille's choice: I chose to offer you the blend that suits all the ingredients. Stemming from Mexican gastronomy, the Curry of the Aztecs will make your taste buds shiver.

Some of these spices can be used on their own while others are not always appropriate or easy to dose properly in a dish. It is really the blend of these different spices that makes Aztec Curry easy to incorporate into all your preparations.
There are many different kinds of curry powder. In fact, the word Curry is a generic term used to call a mixture of spices.
All around the world, there are an infinite number of recipes depending on the country or region you are in. Curry from India, the West Indies, Jamaica, Vietnam, Indonesia... There are dozens of different recipes!
Depending on the tastes of different populations, the Currys are more or less marked by one spice or another. During my many travels, it is indeed the mixture of Aztec Curry that has amazed me the most, and I would like to share this delight with you.
Corn and squash were the basic ingredients of South and Central American cuisine. Together with dry beans, they were the main diet of the Indians. To enhance their culinary preparations, they used chilli peppers grown in large quantities on their land. Mexican coriander has a special flavour that goes very well with the rest of the spices, which is why I wanted to keep it in my recipe. As the Aztecs colonized and discovered the world, the Aztec Curry became richer in flavor thanks to the addition of new condiments.
Beyond the pleasure it brings in terms of scents and tastes in your mouth, Aztec Curry is beneficial thanks to the combination of spices that compose it.
The ingredients that make up this blend are perfectly resistant to cooking! This is a fabulous advantage that gives you the possibility to integrate the Curry :
The Aztec Curry spice blend is perfect for all types of food: meat, fish, vegetables. Its aromas are often used to give flavour to legumes and starchy foods accompanied by vegetables in the preparation of vegetarian or vegan dishes. Don't hesitate to use it in marinades, in the same way as the Aztecs!
If this blend comes from the Central American Indians, it is perfectly suited to all kinds of cuisines, whether Asian or European. Usually one teaspoon of Curry powder is suitable for 4 people. It is up to you to adjust the dosage according to your taste and that of your guests.
Squash was a basic ingredient in Aztec cuisine, it is to season it that the Indians made their Curry powder. Fry onion in butter. Add the chopped carrots and squash. Add a teaspoon of David Vanilla Aztec Curry Spice Mix. Bring chicken or vegetable stock to the boil and add the carrots and squash. Cook for about 20 minutes until the vegetables have melted. Add fresh cream and blend in the blender to make a smooth soup.
The day before, for 24 hours, soak the dried kidney beans in cold water. In a casserole, sauté pureed onion and garlic in oil. Sprinkle with David Vanilla Aztec Curry Spice Mix. Add chopped fresh coriander. Pour in a litre of water and bring to the boil. Add the kidney beans to the casserole and cook over medium heat for 2 to 10 minutes depending on the consistency of the beans you want. Taste and stop cooking when the consistency is at your convenience. Serve with rice and corn

The Aztec Curry spice blend should be stored in a cool, dry place, away from moisture. You can store it directly in the David Vanilla packaging, in a tin can or in a glass spice jar.
