Traditionally, Colombo is a blend of 4 spices: coriander, chilli, garlic and turmeric.
I made the choice to compose my blend using at least these 4 original spices, in order to give you an authentic recipe.
Like Massalé and Ras-el-hanout, the Colombo des Îles blend will vary in composition depending on the region and local tastes.
Did you know that? Colombo des Îles is also known as "Caribbean Curry". It occupies a predominant place in Creole cuisines.
The combination that I propose to you is composed of 10 spices.
Some of these spices are roasted or roasted before being reduced to powder, then the whole is skillfully dosed to offer you a pleasant blend on the nose and in the mouth.
The traditional Island Colombo is a blend of 4 spices: coriander, chili, garlic and turmeric. But colombo has many variations depending on the region or the people who make it up.
Today's Colombo blends can contain up to 10 spices to obtain high-flavoured and more subtle spice blends. This is particularly the case of this Colombo des îles.
Even if at first sight Colombo powder could be confused with curry, you just have to smell this spice mix for Colombo des Îles to differentiate them. Indeed, the fragrances of this blend will be much more full-bodied on the nose than a simple basic curry. It will have an inimitable character once sprinkled into your dishes and recipes.
In the mouth, you will find more developed flavours than those that characterize a Kerala Curry.
The notes that will emerge will be slightly aniseed (thanks to fennel), garlic, spicy and woody (turmeric, cumin and pepper dominant). Then you will feel another more vegetal aromatic impetus, notably due to the presence of coriander and fenugreek.
The alliance of these ten spices and herbs will succeed in transporting you to each of their countries of origin. The hint of salt allows me to amplify my aromatic composition.
Good to know: This Colombo des Îles spice blend is good for long cooking. It therefore has its place in stewed dishes.
If its name directly reminds us of this typical dish of Caribbean gastronomy, you will discover that it is also possible to associate this Colombo of the Islands at different times of the meal, and on very different dishes!
Prepare and enjoy marvellous pigeons of pork, chicken, goat (cabri), having taken care to let the meat marinate all night long before the meal in this mixture. You can try the Colombo de Porc Antillais, in the style of Alain Ducasse.
Colombo is also available with dishes from the sea, such as a colombo of sea bream (mahi-mahi) or swordfish.
Sauce dishes, stews, meats, fish and vegetables... sprinkle a teaspoon of my Colombo mixture over your casserole and let yourself be carried away by its enchanting aromas.
The sweetness of the flavors of Colombo des Îles Spice Blend will also allow you to use it simply to bring a colorful touch to your salads, raw vegetables, or vegetable soups.

A simple and tasty entry that is original and quick to execute. Garnish with peppers, tomatoes and an onion. Fry them in oil. Add a teaspoon of our spice mixture. Serve on a slice of toast. Serve with a salad with vinaigrette.
A side dish rice that seduces for its strong taste. Sauté chopped onions in oil. Add long rice and a teaspoon of Colombo des Îles, fry the rice before moistening it with 0.5 litres of boiling water. Cook and stir. Excellent with poultry or fish.
A dessert with exotic fruits that our Colombo des Îles sublimates. A quick and simple recipe to end the meal on a gourmet yet light note. Cut your mango into large cubes. Plant them on a skewer pick and grill them on the grill. Sprinkle with the spice mixture.
The Colombo desÎles sp ice blend can be stored like most of our spices and herbs: dry and away from light. We recommend that you use an airtight container to keep its aromas intact.
