Pancakes are the flagship food of the Candlemas Festival, which takes place every year in February, but there is no reason not to eat them all year round!

There are dozens of recipes for plain, sweet, rum or orange blossom pancakes. This variant has a delicious vanilla flavour. If you have time, don't hesitate to let the vanilla infuse longer, it will only be better!

To make a success of your pancakes, you must be able to spread the dough in a thin layer in your pan. To do this, your paste must be fairly fluid. After the rest period, it is common for the dough to appear denser. You can then dilute it by adding a little extra milk or water until you get the ideal texture.

Preparation

Split the vanilla and scrape the seeds with the back of a knife.

Heat the milk in a saucepan and add the vanilla grains and pod.

Once boiling, cut off the heat and allow to cool. The pod will continue to infuse into the milk.

Beat the eggs into an omelette in a small bowl.

Sift the flour into a bowl, dig a well, dig a well in the centre and add the eggs.

Mix until a thick paste is obtained.

Gradually add the milk with the pod, stirring constantly with a whisk to remove lumps.

Finally add the tablespoon of oil and the pinch of salt. Mix again.

Let the dough rest for 1 hour in the refrigerator. Remove the vanilla bean.

Make the pancakes by pouring a ladle of dough into a hot frying pan with a little oil.
