It is very easy to make yoghurts at home and they are really much tastier than the ones you buy in stores. The texture is often a little less firm, which may surprise at first glance, but we find the taste of real old-fashioned yoghurts!
When you have a yogurt maker, it is very easy to make a batch of homemade yogurts: you mix the ingredients and the yogurt maker takes care of everything. However, it is quite possible to make homemade yoghurts without a yogurt maker. It is enough to have glass jars with lids, and to cook the yoghurts in a very low oven (45°C) for a period of more or less 6 hours. This reproduces the same operation as the yogurt maker, simply monitor the cooking!
To make yoghurts that are well flavoured with vanilla, I recommend the use of two whole pods.
1 l whole milk
1 plain yoghurt
40 g caster sugar
2 vanilla pods
3 tablespoons of powdered milk
Split the vanilla and scrape the seeds with the back of a knife.
In a saucepan, bring the milk and vanilla to a boil. Allow to cool completely and then remove the pod.
Mix the yoghurt with the sugar and powdered milk in a bowl.
Pour in the vanilla milk, mixing well with a whisk.
Divide the mixture into jars and place in a yogurt maker for 12 hours, without replacing the lid.
Put the lids on and store in the refrigerator for at least 4 hours before eating.
