For breakfast or a snack, it is a pleasure to eat these vanilla muffins with sweet, full-bodied notes thanks to black pepper... They are very soft and light with a classic vanilla flavour that is always successful! Its typicity and the touch of originality that the excellence of these peppers brings us. It is a simple and very quick recipe to make, ideal as a basis for delicious cupcakes

This is a recipe that can be very easily adapted. For example, you can add a spoon or two of bitter cocoa to the batter, or place a square of chocolate in the centre of each muffin before baking them. You can also add flaked almonds or diced fruit to the dough.

Add a glaze with a few drops of food colouring to make beautiful and delicious cupcakes. You can also cover your vanilla muffins with chocolate icing.

Ingredients

For 12 muffins

2 eggs

100 g sugar

20 cl of milk

100 g melted butter

180 g flour

1 sachet of yeast

1 vanilla bean

5g island black pepper

Preparation

Split the vanilla and scrape the seeds with the back of a knife.

In a saucepan, bring the milk, vanilla and sugar to a boil.

Turn off the heat and leave to infuse for 15 minutes. Remove the pod.

Preheat the oven to 180°C.

Mix in a bowl the eggs, the milk-sugar mixture, your finely crushed pepper, melted butter, flour and yeast.

Pour into silicone muffin cups or covered with baking paper.

Bake for 15 to 20 minutes at 180°C.

Allow to cool before removing from the pan.
