Recipe

Everyone should have a good vanilla cookie recipe in their repertoire. These heady vanilla-flavoured cookies will be perfect with hot or iced tea or as a snack at any time of the day. These are old-fashioned butter cookies with a delicate texture and flavour that literally melt in the mouth. You're going to want to do them and do them again!

These shortbreads are fantastic if cooked properly. The ideal solution is to have a special baking sheet for the biscuits that will allow you to obtain a beautiful baking. Otherwise, a silicone sheet or baking paper will also be suitable.

Ingredients

3 egg yolks

100 g powdered sugar

110 g soft butter at room temperature

1 pinch of salt

185 g flour

1/2 sachet of baking powder

1 vanilla pod

3g of the traditional 5 spice blend or spice blend - Gingerbread


Preparation

Split the vanilla in half and collect the seeds with the back of a knife. Reserve.

Whisk the egg yolks with the powdered sugar and vanilla seeds until the mixture becomes frothy.

Add the flour, salt and yeast, the 3g of my spice mixture and mix.

Add the butter and mix again.

Put the dough in the fridge for two hours to make it easier to handle.

Once the dough is cold, form a sausage.

Cut sections about half a cm in diameter.

Place the shortbread on baking paper on a baking sheet, spacing them well.

Cook them for about 15 minutes at 170°C.

They must be golden but may still appear soft, they will solidify as they cool.

Remove them from the oven and put them to cool on a rack for 5 minutes.
