Kampot Black Pepper - Khmer Quality

Cambodia Complex (Clove, Vanilla, Nutmeg)

During my trip to Cambodia, I wanted to develop the black pepper berries that did not meet the PGI specifications with grains smaller than 4mm. I propose you to discover a Kampot pepper with resinous and musky notes. The heart notes are spicy, ensuring a nice complex length in the mouth(clove, Tahitian vanilla, nutmeg).

What is Khmer grade Kampot black pepper?

Khmer grade Kampot black pepper is quite similar to PGI Kampot black pepper. The main difference is that the Khmer quality pepper is downgraded. This is due to its difference in size. The pepper must meet strict specifications, the PGI grain must be 4 mm in diameter. The Khmer quality pepper has a smaller size, which explains its downgrading. Does this impact its taste and quality? No . This condiment remains a very beautiful product that I am proud to present to you and that does not fail to delight the taste buds of buyers. Moreover, its downgrading impacts its price, you get here a very good black Kâmpôt pepper at a price defying any competition. This Khmer quality black Kampot pepper comes from Cambodia, it is grown in the provinces of Kampot and Kep. It is a real pepper since it grows on a Piper Negrum vine. This is because some condiments are called pepper when in fact they are berries grown on other plants. This is the case for example with Timut pepper, Sansho pepper or Sichuan pepper.

What is the flavor of Khmer quality black Kampot pepper?

This downgraded pepper has a slightly different flavor than the PGI Kampot pepper. This time, we find a musky, resinous pepper with a nice complexity in the mouth between notes of clove, Tahitian vanilla and nutmeg.

The harvest of Kâmpôt black pepper Khmer quality

It is during the month of June that the flowers of Piper Negrum bloom in Cambodia. This bloom lasts until September, when small peppercorns appear. It is necessary to wait for autumn and winter to harvest the pepper. If this period is quite long, it is simply because the peppercorns are transformed. Green pepper can be harvested in autumn, while red pepper is harvested in spring. The black pepper of Kampot of Khmer quality is harvested in January. During its harvest, its grains are green. It is during the period of drying that the pepper sees its pericarp become black.

How to use Kampot black pepper Khmer quality?

Khmer grade Kampot black pepper, like many peppers, is a wonderful spice that can be used in a wide variety of recipes. As surprising as it may be, pepper can accompany you from appetizer to dessert to spice up or simply flavor your recipes.
