What is Khmer grade Kampot black pepper?

Khmer grade Kampot black pepper is quite similar to PGI Kampot black pepper. The main difference is that Khmer quality pepper is downgraded. This is due to the difference in size. The pepper must meet strict specifications, the PGI grain must be 4 mm in diameter. Khmer quality pepper is smaller, which explains its downgrading. Does this impact its taste and quality? No . This condiment remains a very beautiful product that I am proud to present to you and that does not fail to delight the taste buds of buyers. Moreover, its downgrading impacts its price, you get here a very good black Kâmpôt pepper at a price defying any competition. This Khmer quality black Kampot pepper comes from Cambodia, it is grown in the provinces of Kampot and Kep. It is a real pepper since it grows on a Piper Negrum vine. I am telling you this because some condiments are called pepper when in fact they are berries grown on other plants. This is the case for example with Timut pepper, Sansho pepper or Sichuan pepper.

What is the flavour of Khmer quality Kampot black pepper?

This downgraded pepper has a slightly different flavour than the PGI Kampot pepper. This time, we find a musky, resinous pepper with a beautiful complexity in the mouth between notes of clove, Tahitian vanilla and nutmeg.

Harvesting Khmer quality Kâmpôt black pepper

The flowers of Piper Negrum bloom in Cambodia in June. This flowering lasts until September, when small peppercorns appear. It is necessary to wait until autumn and winter to harvest the pepper. If this period is quite long, it is simply because the peppercorns are transformed. The green pepper can be harvested in autumn, while the red pepper is harvested in spring. The black pepper of Kampot of Khmer quality is harvested in January. When it is harvested, its grains are green. It is during the drying period that the pepper sees its pericarp become black.
