Khmer quality Kâmpôt black pepper is quite similar to IGP Kâmpôt black pepper. The main difference is that Khmer quality pepper is downgraded. This can be explained by its difference in size. The pepper must meet strict specifications, the IGP grain must be 4 mm in diameter. Khmer quality pepper is smaller in size, which is why it is downgraded. Does this impact its taste and quality? No. This condiment remains a very beautiful product that I am proud to present to you and that does not fail to delight the taste buds of buyers. In addition, its downgrading impacts its price, you get here a very good black Kâmpôt pepper at a price defying all competition. This Khmer quality Khmer black pepper comes to us from Cambodia, it is grown in the provinces of Kampôt and Kep. It is a real pepper since it grows on a liana of the Piper Negrum. Let me clarify this for you inasmuch as some condiments are called pepper when in fact they are berries grown on other plants. This is the case, for example, with Timut pepper, Sansho pepper or Sichuan pepper.
This downgraded pepper has slightly different flavors from IGP Kampôt black pepper. This time, we find a musky, resinous pepper with a beautiful complexity in the mouth between notes of clove, Tahitian vanilla and nutmeg.
It is during the month of June that the flowers of the Piper Negrum bloom in Cambodia. This flowering lasts until September, when small peppercorns appear. It is necessary to wait until autumn and winter to harvest the pepper. If this period is long enough, it is simply because the peppercorn is transformed. Green pepper can be harvested as early as autumn, while red pepper is harvested in spring. Khmer quality black pepper is harvested in January. When it is harvested, its grains are green. It is during the drying period that the pepper sees its pericarp turn black.
Khmer quality Kampôt black pepper, like many peppers, is a wonderful spice that can be used in a wide variety of recipes. As surprising as it is, pepper can accompany you from the starter to the dessert to spice up or simply flavour your recipes.
Let's start this tasting with a salmon gravlax. For the record, this salmon is marinated and dried with salt, sugar, pepper and dill. You can let this salmon marinate for a day. Then remove the excess moisture and cut into thin slices. Roast some Kâmpôt peppercorns in a frying pan and crush them in a mortar. Put a little pepper on your salmon and serve with a salad and a lemon and dill cream.
Preferably cooked on the barbecue, the prime rib is the "pêché mignon" of the great meat lovers.
