What is the wild black pepper of Madagascar?

For this pepper, no suspense, we know immediately its origin. This pepper comes from Madagascar. This pepper comes to us from the family of Piper borbonense, a pepper tree of Bourbon which is nothing else than a very high liana which produces small peppercorns. Bourbon, of course, it reminds the famous vanilla of Madagascar and the Indian Ocean in general. It is a rare pepper because of its harvest that we will mention a little later. This pepper originates from Madagascar and comes to us more particularly from the south of the island. Most of the time, as it is the case here, the wild pepper of Madagascar is black. However, it can be green or red pepper, it is the moment of its harvest according to its maturity that will make the difference. This pepper is also called Voatsiperifery. In Malagasy, "voa" means fruit, while "tsiperifery" evokes the Piper borbonense liana.

What is the flavor of the wild black pepper of Madagascar?

This is the big question. In terms of taste, the wild black pepper of Madagascar is distinguished by its rather soft flavors compared to a traditional black pepper. For as much, it knows how to reveal this heat that we expect from a pepper worthy of this name. Its wild side offers woody and flowery scents. We also find fresh and fruity notes which are not without reminding the lemony flavours of the Sichuan pepper. Treat yourself to a gustatory journey through the forests of Madagascar with this highly fragrant black wild pepper.

The harvest of the black wild pepper of Madagascar in the plantations

There are no real plantations of this pepper since it is wild. It is found in the forests of the south of the country, on lianas that grow very high. These can reach a height of twenty meters, that is why this pepper is rare. Its wild aspect associated with the fact that its harvesting is far from being simple make it a pepper which is not produced in important quantity.

It is also called pepper of the peaks like the one produced in Vietnam and that I also offer on my online store of spices and vanilla. The wild black pepper of Madagascar is harvested by hand and then dried to develop all the flavors of this small berry.

How to use the black wild pepper of Madagascar in cooking?

Let's take a seat in the kitchen to discover how Madagascar wild pepper can revolutionize your dishes. Like any pepper, it finds its place on your table from the starter to the dessert. The voatsiperifery pepper is a perfect addition to your fish and shellfish dishes. It is perfect as a starter in a delicious homemade scallop to spice up the béchamel sauce.

As a main course, black pepper adds character to your pepper sauce, which will accompany red or even white meats. You can also infuse a few peppercorns in a veal blanquette or even a blanquette of the sea, it is simply delicious.

This wild black pepper from Madagascar is less powerful than some of the peppers we usually find. It can also be used for dessert. In a strawberry salad with a little vinegar, delicately sprinkled on a dark chocolate fondant, it flavors your dessert and cuts through the sometimes too sweet notes.

Je trouve que les grains sont très petits. J'ai l'habitude de prendre ce poivre chez un concurrent. Pas grave.
