What is Tellicherry pepper?

Tellicherry pepper comes from India, and more precisely from the city of Thalassary (the French name of Tellicherry). This town in the state of Kerala on the Malabar coast in southwest India offers you a great pepper. Did you know that? On this same coast is produced the MG1 Malabar pepper. This is the standard pepper that spice merchants use to determine a grade. The Malabar coast is a strategic location for spice merchants. At the beginning of the 18th century, the English built a defence in the heart of Tellicherry to better control the trade in pepper, a highly prized spice that was of real economic interest to the colonizers. Some peppers are said to be "original", such as Tellicherry pepper. Tellicherry is the assurance of obtaining a noble pepper of high quality obtained from the best berries. The pepper from India is a piper nigrum (black pepper). Picked when fully ripe, the red berries are then dried and take on this black tint, even if you will see here and there some slightly reddish grains. What is the flavour of Tellicherry pepper?

The harvest of Tellicherry pepper in plantations

The pepper from India is a piper nigrum (black pepper). Picked at full maturity, the red berries are then dried and take on this black tint, even if you will see here and there some slightly reddish peppercorns. The harvest of this pepper being late, it offers grains of beautiful size. The berries are harvested twice a year.

How to use Tellichery pepper in cooking

To taste Tellicherry pepper is to risk not being able to do without it. The magnificent bunches of this wild pepper offer you berries with warm flavours that will delight your taste buds. When we talk about consuming Thalassary pepper, we can imagine that the possibilities are numerous. Perhaps they are even infinite. This pepper enhances the taste of a mushroom or truffle risotto. It sublimates a pike-perch with its citrus notes and magnifies the white butter that accompanies it. With a barbecue steak, prepare a small Tellicherry pepper marinade. In a frying pan or with a roast beef, make a superb pepper sauce, your dish will take on a whole new dimension. For your pepper sauce, you can try combinations with Szechuan pepper, white pepper or long pepper. You can imagine everything with this spice. Naturally, it gives a particular flavour and aroma to white meats. What is extraordinary with pepper is its ability to combine with different flavours.
