This pepper plant, which is a vine, grows on a natural stake. Wild pepper vines, wrapped around their stake, can easily reach 20 to 30 metres in height. This makes it relatively difficult to collect Voatsiperifery Wild Red Pepper in the sense that you must first go to the heart of the tropical forest by taking paths at the edge of the passable. Then, once on site, climb to several tens of metres high, along the pepper plant, in order to gently harvest this berry, which has a high water content and is therefore fragile
This pepper is very aromatic. This allows it to be used without restraint in all kitchens and all types of dishes that you would like to prepare. Crush it, ideally, at the end of cooking, on your favourite dishes.
This Madagascar pepper when red is a sign of overripeness or "late harvest".
The grains have reached their peak in terms of aroma and develop their full olfactory power. On the same vine, the development stage of the bunches will never be the same. Unmature green bunches and "late harvest" grapes that are overripe can be found there
The difficulty of its harvesting and production can only be done on a small scale. As global demand increases, farmers feel a form of pressure that sometimes leads them to use harvesting processes that are less environmentally friendly, such as simply pulling out vines or cutting down natural stakes.
Currently, several groups of local researchers are trying to find a way to domesticate this pepper in order to allow producers to meet demand, without having to use processes that would tend to disappear this variety and harm local biodiversity.
It will share its warm flavour with your dishes made with fish (white) and seafood. But he will not fail to show you his aromatic palette in a simmered dish as well! All white meats are sublimated in contact with this pepper, which is as fragrant as it is sweet on the palate.
