To discover this rare and wild pepper, you must visit Madagascar's primary and virgin forests.

This pepper plant, which is a vine, grows on a natural stake. Wild pepper vines, wrapped around their stake, can easily reach 20 to 30 metres in height. This makes it relatively difficult to collect Voatsiperifery Wild Red Pepper in the sense that you must first go to the heart of the tropical forest by taking paths at the edge of the passable. Then, once on site, climb to several tens of metres high, along the pepper plant, in order to gently harvest this berry, which has a high water content and is therefore fragile

This pepper is very aromatic. This allows it to be used without restraint in all kitchens and all types of dishes that you would like to prepare. Crush it, ideally, at the end of cooking, on your favourite dishes.

This Madagascar pepper when red is a sign of overripeness or "late harvest".

The grains have reached their peak in terms of aroma and develop their full olfactory power. On the same vine, the development stage of the bunches will never be the same. Unmature green bunches and "late harvest" grapes that are overripe can be found there

The difficulty of its harvesting and production can only be done on a small scale. As global demand increases, farmers feel a form of pressure that sometimes leads them to use harvesting processes that are less environmentally friendly, such as simply pulling out vines or cutting down natural stakes.

Currently, several groups of local researchers are trying to find a way to domesticate this pepper in order to allow producers to meet demand, without having to use processes that would tend to disappear this variety and harm local biodiversity.

    Savoury recipes

It will share its warm flavour with your dishes made with fish (white) and seafood. But he will not fail to show you his aromatic palette in a simmered dish as well! All white meats are sublimated in contact with this pepper, which is as fragrant as it is sweet on the palate. Thus, you can prepare dishes based on veal, lamb or pork (even in the form of sausages, by the way!) by adding an exotic note accessible to all palates, even those sensitive to the spicy aspect of other black peppers.

It is a pepper that is easily combined, and at will

All vegetables - regardless of how they are cooked - will feel flattered to be associated with the aromas that Voatsiperifery Red Pepper will emit alongside them. Farewell to the blandness of steamed vegetables! This pepper will bring them an unsuspected flavour and character.

You can also make a wonderful combination of this pepper on a pan of fresh chanterelles.

Your sauces, too, will have a more pronounced character thanks to the addition of Madagascar's Wild Red Pepper!

    Sweet recipes

Delicacies and other dessert lovers can discover this surprising pepper by simply sprinkling it on a fruit salad (apples, pears, strawberries, melons and other more exotic flavours such as lychee, mango,...).

Of course, chocolate desserts will easily lend themselves to the game of exoticism when you see the cocoa flavours teasing your taste buds with the complicity of Voatsiperifery Pepper. Integrate this pepper into your mousses, creams, and other chocolate soft drinks (the amazing taste challenge will be even more successful if you choose a dark chocolate with a minimum of 70%!).

In Malagasy cuisine, and other cuisines around the world, this pepper will be the ideal companion for all your sweet and savoury dishes.

French chefs have adopted it in their kitchens!

You can start your meal with Mushrooms stuffed with Goat cheese, in the Alain Ducasse way, then continue with a Pot-au-Feu with 5 meats according to Sophie Dudemaine. Finally, finish your meal on a gourmet note with a Chocolate and Red Pepper Fondue (accompanied by exotic fruits, a treat!).

Although some Malagasy ethnic groups have long used it for medicinal purposes, wild pepper has only recently become available in the best delicatessens. Nowadays very fashionable, the voa(fruit)-tsiperifery (name of the plant) is still little known, even by the inhabitants of the big island
