If there's one thing I have to remember from my months in London, it's "Think differently". My wish for each of the spices I propose is to make you discover flavours, aromas different from what you can easily find elsewhere
To always be able to surprise you, you must therefore adopt this Anglo-Saxon principle. Think differently, go back to the origins of pepper in Brazil.
To do this, it is necessary to descend to more than a thousand kilometres from the Parà region (near French Guiana).
The first Piper nigrum plants arrived in Brazil at the docks of the ports of Salvador de Bahia and Porto Seguro. The mountainous and tropical climate of the Bahia region was perfect for developing pepper plantations. They were first developed in the Bahia region and then in Espirito Santo.
My priority: to be able to offer a pepper full of sunshine that was off the beaten
track once again. My eyes naturally turned to the southernmost, wilder region, Espirito Santo.
The production area was selected. An original region where the first plantations were set up in Brazil.
If you have to remember one thing, it is the pleasure of being able to discover a black pepper worked with passion.
It will have taken months of work at my level:

I wanted to offer you a black pepper that is accessible to as many people as possible but that respects the David Vanille specifications
On this selection of black pepper, the visual was not what mattered most to me. Unlike a Kampot who has to be immaculate, I really wanted something else that was more "original", simple and very distinctive. Here, we erase everything we thought we knew again, close our eyes and let ourselves be guided by our hearts and palates.
This is how I chose this batch of Espirito Santo Black Pepper to transport you to a unique taste experience
It is best to add it at the end of cooking, especially for dishes that need to simmer for more than two hours. Finally, be careful not to have your hand too heavy on the pepper when you season a dish. Let your guests add Brazilian black pepper to their plates themselves according to their taste.
Store your ground pepper in an airtight box away from light. Under these conditions, it will even improve as it ages!
This black pepper with a warm palate will quickly become the pepper of your daily life. It will allow you to discover a "fresh" quality
An inseparable companion to salt, you can use it in all types of salty dishes: meat, fish, vegetables, sauces, sausages, etc. It will do wonders, for example, by adding it generously to breadcrumbs or mixing it with hazelnuts, then using it in breadcrumbs to bread chicken, cheese or tofu. It is the star ingredient of Italian pepper pasta, called cacio e pepe, and pepper steak, but it will perfectly match your duck breasts, shrimps or mushrooms.
It is very suitable for simmered dishes, as long as it is not added too early to preserve the flavours of the other ingredients. To obtain a pepper that is really fragrant and to your taste, you can make a mixture of several origins for your pepper plant, such as Timut pepper from Nepal with notes of Yuzu and Grapefruit

We don't think about it right away but the combination of pepper and desserts can lead to very nice surprises that will delight your taste buds!
A panna cotta with red fruits to sublimate? A strawberry salad to make sparkling? Black pepper will meet these expectations!

Among chefs, it will be available at any stage of the meal, such as as as an appetizer with the My Blend Salad by Laurent André, then continue with the Magret de canard with black pepper, a bigarade sauce in the Alain Ducasse style, and finally, taste delicious raspberries with balsamic vinegar according to Guy Savoy's recipe.
Pepper has played an important historical role in history: its high price encouraged sailors to seek a sea passage to India, abandoning the land route for caravans.
Pepper was imported into Brazil during the 17th century. Today, the largest plantations are in the north of the country, in the state of Parà. In northern Brazil, 40,000 tons are harvested per year. The demand having been increasing on peppers from the Tome-Açu, Guama, Paragominas and Castanhal region, I wanted you to discover a pepper that is out of the ordinary.
