In a separate bowl, whisk together 2/3 cup birch sugar, 1/2 cup vegetable oil, 3/4 cup milk, 1 egg, and 1/2 teaspoon vanilla until smooth. Add the dry ingredients to the wet ingredients and mix until the batter is smooth. Pour batter into greased cake pan and bake at 350°F for 30 minutes.

Birch Sugar Banana Bread

Mix 3 cups of flour, 1 teaspoon of salt, 1/4 teaspoon of baking soda and 1/2 cup of birch sugar. In a separate bowl, whisk together 3 mashed ripe bananas, 1/2 cup milk, 1/4 cup melted butter and 1 egg until well blended. Add the dry ingredients to the wet ingredients and mix until the batter is smooth. Pour batter into greased loaf pan and bake at 350°F for 45 minutes.

Apple and Birch Sugar Crumble

Preheat oven to 375°F. Peel and dice 4 apples. In a bowl, mix 1/4 cup of flour, 1/4 cup of birch sugar, 1/2 teaspoon of cinnamon and 1/4 cup of melted butter until the mixture is smooth. Place the apple pieces in an ovenproof dish and sprinkle the crumble mixture over the apples. Bake for 30 minutes.

Birch Sugar Smoothie

Put 1 chopped banana, 1/2 cup frozen raspberries, 1/2 cup coconut milk, 1 teaspoon birch sugar and 2 tablespoons chia seeds in a blender. Blend until smooth.

Strawberry and Birch Sugar Sorbet

Place 2 cups of frozen strawberries, 1/4 cup of birch sugar, 1/4 cup of lemon juice and 2 tablespoons of honey in a blender. Blend until smooth. Place the mixture in an ice tray and freeze for about 4 hours.
