Brown sugar is a product of sugar cane. The cane is crushed to extract a juice which is then purified. This juice contains 85% of water which must be eliminated by evaporation, it is then boiled, wrung out and dried before being packaged.

The tonka bean grows on Brazilian teak in orange fruits that look like a small mango. When the fruits fall from the tree, they are harvested and the bean, this precious spice, is extracted and dried for up to a year in a shaded area. They are immersed in an alcohol bath before being dried again.

Sweet and sour sauce with tonka bean brown sugar

Make a sauce with soy sauce, honey, garlic, cider vinegar, water and Tonka bean brown sugar. Coat your chicken with this sauce and bake in the oven. Serve with rice on which you can also pour some of this sauce. Lovers of sweet and savory cuisine will love it.

Crème brûlée with brown sugar and Tonka beans

Make a crème brûlée by cutting a vanilla bean in half to extract the seeds. Infuse the vanilla pods in liquid cream over low heat. Beat egg yolks and brown sugar with the tonka bean and add the vanilla seeds. Pour the cream over the mixture, whisking well. Place the cream in ramekins and bake in a bain-marie for 30 minutes. Let cool and then pour the Tonka bean brown sugar over the cream and blowtorch it.
