Tonkabean brown sugar is a subtle combination of sweetness and power. From the simplest recipes to the most elaborate, the brown sugar with tonka bean will surprise you.
For those of you who are not familiar with the Tonka bean, it is a bean native to Latin America. This spice also called " coumarou " comes from the Brazilian teak and seduces in the kitchen, especially in pastry. It is particularly appreciated by great chefs.
Tonka bean brown sugar has vanilla and sweet almond flavors. The association is very subtle, but it will not fail to seduce you by its finesse. The tonka bean is a powerful spice, it is dosed here sparingly so as not to overpower the sweetness of brown sugar.
Brown sugar is a product of sugar cane. The cane is crushed to extract a juice which is then purified. This juice contains 85% of water which must be eliminated by evaporation, it is then boiled, wrung out and dried before being packaged.
The tonka bean grows on Brazilian teak in orange fruits that look like a small mango. When the fruits fall from the tree, they are harvested and the bean, this precious spice, is extracted and dried for up to a year in a shaded area. They are immersed in an alcohol bath before being dried again.

I propose you Asian flavors with a delicious and original sweet and sour sauce. Heat tomato coulis in a saucepan with water, white vinegar, soy sauce and a little cornstarch. Add brown sugar to the Tonka bean to flavour your preparation and give it that sweet taste, but also those flavours between vanilla and sweet almond. Enjoy with beef samosas.
Make a sauce with soy sauce, honey, garlic, cider vinegar, water and Tonka bean brown sugar. Coat your chicken with this sauce and bake in the oven. Serve with rice on which you can also pour some of this sauce. Lovers of sweet and savory cuisine will love it.
Make a crème brûlée by cutting a vanilla bean in half to extract the seeds. Infuse the vanilla pods in liquid cream over low heat. Beat egg yolks and brown sugar with the tonka bean and add the vanilla seeds. Pour the cream over the mixture, whisking well. Place the cream in ramekins and bake in a bain-marie for 30 minutes. Let cool and then pour the Tonka bean brown sugar over the cream and blowtorch it.
Tonka bean brown sugar should be kept in a dry place away from light.
