You may not yet know what coconut blossom sugar is and, as you will soon find out, that's a shame. Why? Because sugar is often an enemy of well-being and health and there are much healthier alternatives like Muscovado sugar or coconut blossom sugar. Another advantage of this sugar: it is sustainable. Indeed, to obtain it, we simply use the sap of the coconut tree, which allows the tree to continue to live and produce fruit for many years. It is also recognized as the most sustainable sugar by the United Nations Food and Agriculture Organization. According to Gandhi, the coconut blossom sugar is the "counterpoison of misery" because it allows poor populations to work. If it is manufactured mainly in Indonesia and the Philippines where it is very popular, it begins to make a real reputation in the West. This sugar has a very nice light brown color. It is not refined and does not contain any additives, it does not undergo any processing, it is a truly natural sugar.
Unlike refined white sugar, coconut blossom sugar has a lot of flavor. It has intense vanilla and caramelized notes.
Coconut blossom sugar betrays its origin by its name. It is actually produced from coconut sap harvested by hand from coconut trees. The harvesters climb the trees to hang the stems of coconut flowers. They are shaken, the sap is collected in containers placed underneath. Did you know that? A coconut tree can produce up to 25 kilos of sap per day, enough to make a lot of coconut flower sugar. The harvested sap is then heated to evaporate the water and make a syrup. The coconut nectar will harden to form sugar crystals which will then be mixed to obtain a beautiful powder.
Coconut blossom sugar is a sugar, we imagine it perfectly in our desserts with its subtle and caramelized taste. However, it can also be used in other savory preparations.
Prepare a caramel with water and coconut blossom sugar. Add a little soy sauce to this preparation, some sesame seeds and cook your shrimps for a few minutes so that they soak up this delicious sweet and sour taste.
Do you like Asian flavors and sweet and sour? This dish is for you to discover. Brown your chicken pieces in a pan with an onion. In parallel, prepare a coconut milk sauce with curry and ginger to which you will add a spoonful of coconut blossom sugar. This may not seem like much on the scale of a recipe, but it will make all the difference in terms of taste.
This recipe is extremely simple, you just have to go back to the basics of crumble and replace the refined white sugar by a natural coconut flower sugar. This little caramelized taste will make the difference at the time of the tasting.
As coconut blossom sugar is not refined, it is much healthier than white sugar. Its glycemic index is much lower (25 to 35 against 70 for white sugar), it is therefore to be preferred by diabetics who must control the glycemic intake in their diet. Rich in vitamins B and C and in antioxidants, it maintains the central nervous system and allows a better regeneration of the cells. Coconut blossom sugar contains inulin, a soluble fiber that has a positive effect on intestinal transit and strengthens the immune system. It also contains nitrogen which has a beneficial effect on the cardiovascular system.
Coconut blossom sugar is humid, it is preferable to keep it in an airtight container in a dry place.
