A true gustatory voyage with David Vanille's spice blends and curries

I've created spice blends for you, for authentic, traditional recipes or more original creations. My aim was to respect the flavour of each spice and combine it with the spices that would sublimate it. This was a long-term project that required a great deal of testing. You don't mix spices randomly. A spice blend must be a subtle alliance between different aromas, ensuring that each one asserts its presence without overpowering the others. The right balance is essential to maintaining an exceptional aromatic palette. Chilli pepper is the perfect example. It takes precedence over the other spices and herbs. As a result, it needs to be subtly added to give your recipe a little kick without becoming the star of the show. This is even more the case when it's a very strong product, like cayenne pepper. Piment d'Espelette, which isn't as strong on the Scoville scale (it's a level 4 compared with 8 for Cayenne), is slightly easier to dose. When you buy spice blends in supermarkets, the quality of the spices is inferior and the dosages are sometimes questionable. Most of the time, certain ingredients are simply indistinguishable. If you've ever bought a four-spice blend, you've certainly noticed. Asian spice blends

Asian food is renowned the world over. Restaurants of this type are springing up all over France, and food lovers are turning to Chinese and Indian preparations to delight their taste buds. Here are a few spice blends based on curry, one of Asia's star products. With Kerala Curry and Indian Company Curry, you can sublimate your preparations. Contrary to popular belief, curry is not a spice, but a genuine blend of spices. Enjoy a subtle combination of coriander, turmeric, fennel, mustard, chilli, fenugreek, salt and pepper with a coconut milk chicken. Each ingredient brings its own strength and sweetness to this curry. For Asian flavors, don't hesitate to add ginger, a must-have ingredient for that distinctive lemon, chili and pepper taste.

Mediterranean spice blend

Let's go a little further south this time and cross the Mediterranean for flavors that are both Mediterranean and Oriental. We offer you a delicious Ras-el-Hanout Royal made with turmeric, coriander, caraway, cumin, fennel, salt, hot pepper and fenugreek. A perfect addition to your couscous and tajine. A fragrant blend that's a must-taste.

Let's return to France with Provençal marinade
. It, too, is one of my proudest creations. Rosemary, marjoram, thyme, pepper, garlic, mustard, tomato, your beef brochettes and pork loin will never taste the same again.

Let's head to the sunny islands for a West Indian spice blend. Onion, garlic, parsley, hot chili pepper - it's all you need to create an incredible blend to spice up your fish and make a delicious dog sauce.
